Orange & Mint Fall Salad with Pumpkin Maple Vinaigrette
Ingredients
1 container Superior Fresh Mighty Mix (or other salad blend)
2 tbsp. fresh mint, chopped
4 small clementines, peeled and wedged
1 cup red grapes, quartered
1/4 cup red onion, thinly sliced
1/2 cup chickpeas, rinsed and drained
1/3 cup pomegranate seeds
1/4 cup roasted & salted pistachios, roughly chopped
PUMPKIN MAPLE VINAIGRETTE
1/4 cup canned pumpkin (not pumpkin pie filling)
1/4 cup apple cider vinegar
2-3 tbsp. maple syrup (we like ours a little on the sweeter side)
1 tsp. Dijon mustard
1 tsp. garlic, minced
1/2 cup olive oil
Pepper, to taste
3 sprigs of thyme leaves, chopped
Instructions
Combine all vinaigrette ingredients into a mason jar and shake well to combine. For a thinner consistency, add water 1 tbsp. at a time.
Place salad greens in a shallow serving bowl.
Layer all toppings over the salad greens, ending with the chopped mint and pistachios.
Drizzle vinaigrette over salad and serve immediately.
