- Preheat oven to 350 degrees.
- In a blend, add 1 cup cranberries, balsamic vinegar, orange juice, maple syrup and blend on high for 1-2 minutes.
- In a cast iron skillet, pour cranberry glaze to cover the bottom. Next, add each salmon portion, skin side down. Top each piece with olive oil, salt, pepper, and rosemary.
- Place extra whole cranberries around the salmon.
- Bake for about 18-20 minutes. Turn broiler on and broil for about 2-3 minutes at the end until the glaze becomes thick and the fillets are flaky.
- Remove from oven and serve immediately.
