Ingredients
Meatball
- 1 container either Superior Fresh Living Butter Lettuce or Citrus Splash
- 1 lb. Superior Fresh Salmon Burgers (4 patties)
- 1 egg
- 1/2 cup panko breadcrumbs
- 1 small onion, grated with juice
- 2 garlic cloves, minced
- 1/4 cup cilantro, chopped leaves and stems
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp paprika
- 1/2 tsp cinnamon
- 1/2 tsp cayenne
- 1/2 tsp salt
- 1/2 tsp black pepper
Mint Yogurt Sauce
- 1 cup plain non-fat Greek yogurt
- 1 garlic clove, minced
- 2 tbsp fresh mint, chopped
- 2 tbsp lemon juice
- Salt & pepper to taste
Instructions
- Combine all meatball ingredients and mix until incorporated.
- Portion and roll 1.5 oz of salmon mixture and set aside. Recipe should make roughly 18-20 meatballs.
- Combine all ingredients for yogurt mint sauce.
- Using a cast iron skillet, heat about ¼ cup of oil. Add meatballs and cook until golden brown while turning to evenly cook (10-12 minutes or 145 internal temperature).
- Serve with mint yogurt sauce and chopped butter lettuce or Citrus Splash salad blend.
