Grilled Salmon with Superior Selections Salad
Ingredients
6oz Superior Fresh Atlantic salmon fillet, qty. 4
2 tbsp. canola oil
Kosher salt and black pepper
6 oz Superior Fresh ‘Superior Selections ’ Organic Chopped Salad
1 cup cherry tomatoes, halved
1 red onion, thinly sliced
1/2 cup banana peppers, sliced
1 package fresh mozzarella pearls
DRESSING [makes 1 cup]
1/4 cup balsamic vinegar
1/4 cup extra virgin olive oil
1 tbsp. lemon juice, freshly squeezed
2 sprigs fresh oregano
1/4 tsp. ground black pepper
Preparation
Season salmon generously with salt and pepper.
Add the salmon fillets to the pan with the oil. Let the fish cook in the oil for 7-8 minutes, turning halfway through. Remove from the oil with a fish spatula to a plate before serving.
Toss greens with dressing. Plate and garnish with tomatoes, cucumbers, and red onion.
Top off salad with salmon fillet and serve.
