Blackened Salmon Caesar Salad
Ingredients
4oz Superior Fresh Atlantic salmon fillet, skinned, qty. 2
2 tbsp. canola oil
6oz Superior Fresh ‘Refreshing Romaine Blend’ Organic Chopped Salad
1/2 cup Caesar dressing
2 tbsp. cajun or blackening seasoning
1 cup croutons
1/2 cup parmesan cheese, shaved
DRESSING
3 egg yolks
2-3 tbsp. anchovy, finely chopped
1/2 - 3/4 cup extra virgin olive oil
1 garlic clove, grated
2 tbsp. fresh lemon juice
2 tsp. cracked pepper
Dash of Worcestershire
Preparation
DRESSING
Beat eggs, anchovy, and garlic in a glass bowl. Add pepper, Worcestershire, and lemon juice.
Continue to beat while slowly drizzling olive oil until well combined.
Add salt and pepper to taste.
SALMON & SALAD
Season salmon fillets and heat canola oil in a cast iron skillet.
Sear salmon for 4 minutes, flip, and cook additional 2 minutes or until flesh is just translucent.
In a mixing bowl, toss salad with dressing and croutons until coated.
Plate salad and salmon and garnish with shaved parmesan.
