Caribbean Salmon Burger with Mango Salsa
Ingredients
4 Superior Fresh salmon burgers
4 Brioche buns
2 tbsp canola oil
2 oz jerk marinade/sauce (any brand)
1 avocado, sliced
2 cups Superior Fresh Citrus Splash or Spring Mix
2 tbsp mayonnaise
MANGO SALSA
2 ripe mangoes, diced
1 small red onion, diced
1 small red bell pepper, diced
1 serrano chili, minced
1/2 cup cilantro, chopped
Juice of 1 lime
Salt and pepper to taste
Preparation
Combine all salsa ingredients and refrigerate for at least 1 hour.
Pan sear salmon burgers (from frozen) in oil for 3-4 minutes per side or until golden brown and crusty. Burgers can also be grilled from frozen if preferred.
Top each patty with jerk sauce.
Butter and toast each bun.
Assemble all burger ingredients and top with mango salsa.
