Cedar Plank Bruschetta Salmon

Ingredients

  • 4 portions of Superior Fresh Atlantic Salmon (approximately 6oz portions)

  • 2 tbsp. olive oil

  • Salt & pepper to taste

  • 2 tbsp. balsamic glaze

  • 1 cup cherry tomatoes, sliced

  • 1/3 cup Superior Fresh basil, thinly sliced

  • 1/4 cup grated parmesan cheese

  • Cracked black pepper for topping


Instructions

  1. Soak cedar planks for at least 2 hours prior to grilling, or overnight.

  2. Set grill to medium-high heat.

  3. Place 1 portion of salmon on each cedar plank. Drizzle each with olive oil and season with salt and pepper to taste.

  4. Grill salmon for about 15 minutes, until it starts to flake. Remove salmon from the planks once done.

  5. Place salmon on serving plate and top with cherry tomatoes, basil, and parmesan cheese. Drizzle with balsamic glaze and sprinkle cracked pepper before serving. Enjoy!
