Balsamic Steak Salad with Grilled Corn
Ingredients
1 container Superior Fresh Power Blend salad greens
1 lb. sirloin steak
1 cup cherry tomatoes, sliced
1/2 red onion, sliced
4 oz. gorgonzola cheese, crumbled
2 cobs of corn, husk removed
1 tbsp. olive oil
MARINADE
2 tbsp. balsamic vinegar
1 tbsp. Worcestershire sauce
1/4 cup olive oil
1/2 tsp. dijon mustard
1/4 tsp. garlic powder
1/2 tsp. salt
1/4 tsp. black pepper
BALSAMIC VINAIGRETTE
3 tbsp. balsamic vinegar
1/2 cup olive oil
1/2 tsp. dijon mustard
Salt & pepper to taste
Instructions
Set grill to medium-high heat.
Prepare marinade by whisking all ingredients together in a medium-sized bowl. Add steak to bowl and set in fridge for at least 30 minutes.
Make the vinaigrette by combining all ingredients in a small mason jar and shaking until blended.
Remove steak from the fridge and grill until done to your preference, about 10 minutes total. Remove steak from heat and let sit for at least 10 minutes before slicing.
Brush cobs of corn with olive oil and place on grill, turning corn often and grilling for about 10 minutes total.
Remove corn from grill and slice kernels off the cob.
Separate the Power Blend onto two large dinner plates and top with cherry tomatoes, red onion, corn kernels, and sliced steak. Sprinkle with gorgonzola cheese and finish with the balsamic vinaigrette drizzled on top. Enjoy!
