Classic Atlantic Salmon Sashimi
Ingredients
2oz Superior Fresh Atlantic salmon fillet
2 tbsp. soy sauce
1 tbsp. yuzu juice or lime juice
1 tsp. sesame oil
1 piece fresh ginger, peeled for zesting
GARNISH
1 green onion, thinly sliced (bias cut)
1 red Thai chili or fresno, sliced into thin rings
1 radish, thinly sliced and quartered
1/2 tsp. lime zest
1/2 tsp. orange zest
1/2 tsp each white, black, and green (wasabi) sesame seeds
Preparation
Mix soy sauce and yuzu juice in a small bowl.
On a dinner plate, spread the sesame oil into a 3-inch circle. Using a plainer, grate 1/2 tsp fresh ginger onto the oil.
Thinly slice salmon into 3-5 pieces as thin as possible. Place salmon slices on the sesame oil circle.
Drizzle a tbsp. or more of soy mixture on the salmon.
Garnish with sesame seeds, chilis, green onions, radish, and approximately 1/2 tsp of both the lime and orange zest.
