Steak & Avocado Salad
Ingredients
1 lb. steak of your choice
1 tbsp. olive oil
Salt & pepper
1 container Superior Fresh Spring Mix
1/4 red onion, sliced
1/2 lb. asparagus
1 cup cherry tomatoes, sliced
1 avocado, sliced
CHIMICHURRI DRESSING
1 garlic clove
1 cup fresh cilantro
2 tbsp. red wine vinegar
1 tbsp. lime juice
3 tbsp. olive oil
1/4 tsp. smoked paprika
1/2 tsp. red pepper flakes
Salt & pepper
Instructions
Grill the steak and asparagus to your desired doneness. Let the steak rest prior to thinly slicing.
Add the dressing ingredients to a blender or food processor and blend until smooth, adding more olive oil if desired.
Layer the spring mix, steak, asparagus, red onion, cherry tomatoes, and avocado on a large serving platter.
Top with chimichurri dressing and enjoy!
